why do we speak a lot of Latin America and very rarely about latin Europe?

why so many people think that latin cultures and peoples exist only in the Americas, while they originated from Europe.

Yes, Latin culture orginated in Europe, but what people mainly refer to as the Latin American culture is practised by people who are mixed descendents of the Spanish settlers and Native Americans. The pure Spanish of Europe is not the same, for teh most part, as you see in for example Mexico.
Maybe because there is more of a population in Latin America?
Because Latin America is closer to the US. We’re more impacted by them, so everybody thinks about them first when they hear "Latin." However, the term "Latin" generally encompasses Europe too… for example, Italian singers are eligible for the Latin Grammies.
"Latin America" is a term used to describe those people who live in the Western Hemisphere and speak a Latin-based language, and generally applies to residents of Mexico, Central and South America.
Like many terms, it’s imprecise. For instance, most residents of Quebec speak a Latin-based language, but Quebec is never considered to be part of Latin America.
Instead of quibbling with a term’s linguistic origins, find out what its user means by it.
Meaning is an interplay between user and listener. If the listener is a pedant, it can render meaning meaningless.
maybe because the latin population is bigger and the home of the latin lanaguage is closer to us…. i believe the population of europeans is very low compared to the latin amrican.
To distinguish the latin speaking – spanish and portugese – countries from the rest of the america’s – well, really america and Canada. Although Canada does speak french – a Latin language.
